Looking for a healthy magazine? Try Well Being Journal (http://www.wellbeingjournal.com/)! It is a great health magazine with new health tips and studies. They recently published an issue with a story about Grains called "Grains: Are They Really a Health Food?" by Nora T. Gedgaudas (C.N.S., C.N.T.). Here is a link to part of this article: (http://www.google.com/url?sa=t&rct=j&q=&esrc=s&source=web&cd=1&ved=0CGAQFjAA&url=http%3A%2F%2Fwww.wellbeingjournal.com%2Fcomplimentaryissue%2FWellBeingJournal.pdf&ei=9WbkT9f5Ja230AGQifGJCg&usg=AFQjCNHKB6MFjo6OacHeIA1Nli61PShiOQ&sig2=f_cIAJLhW-dVejLSs1OyGA). (It opens as a PDF) This article mainly highlights gluten grains and how they have negative/adverse health effects on all humans (not just people with Celiac Disease or gluten intolerance). Mainly, gluten grains harm people's digestive systems and have caused people to gain weight and have other health problems. This is why I and many others have turned to the paleo diet. For the past 2.6 million years our ancestors have been hunter-gatherers who ate meat, nuts, seeds, fruit, and vegetables..NO GRAINS! This must mean something...our bodies were all so used to eating these nutritious foods until farmers figured out how to grow wheat and grains. Ever since, there have been escalating health problems including cancer, diabetes, obesity, etc. These problems will just keep inclining as our food gets more processed and more grains are added. The paleo diet is the diet of our ancestors and the rules are quite simple (well sort of). Here is a great website and blog to learn about the paleo diet: http://robbwolf.com/what-is-the-paleo-diet/! You should check it out!

I was diagnosed with Celiac Disease right before the Summer of 2010. Newly diagnosed, I didn’t know much about gluten. I have come a long way since. I love to cook gluten free and paleo, exercise (crossfit, weightlifting, and running), and learn about health. I aspire to start a gluten-free/paleo bakery someday. This is the life of a celiac.
